Ingredients of Amla Chutney:
- 4 Amla
- Coriander 2 spoons
- Green chillies
- A pinch of cumin
- Rye
- Oil 1 tbsp
- Salt to taste
- One piece of ginger
Method:
Soak the gooseberries in hot water for five minutes and peel off the skin. Remove the seeds.
Add coriander seeds, green chillies, ginger, cumin, seeds, salt. Put in a mixer and make a paste without water.
Heat oil and add hing & rai.
Temper the paste with this and mix.
How to make Amla Subzi?
Ingredients of Amla Subzi:
- Amla ¼ kg
- Onion, finely chopped 1
- Ginger-garlic paste 1 tbsp
- Green chilli paste 2 tbsp
- Rye seeds (mustard) ½ tsp
- A few curry leaves
- Haldi (turmeric powder) ¼ tsp
- Red chilli powder 1 tbsp
- Fenugreek (fenugreek) powder 3 tbsp
- Coriander (coriander) powder 1 tbsp
- Cumin powder ¼ tsp
- A pinch of asafoetida
- Salt to taste
- Oil as required
Method:
In a pressure cooker, pressure cook the amla with a cup of water for two whistles. After the pressure subsides, open the cooker, remove the amla seeds.
Heat oil in a pan. Add asafoetida, kadipatta and let it crackle.
Add ginger-garlic paste, green chili paste, onion and salute for a few minutes. Then after add dry spices and keep stirring on medium heat.
Add amla, salt and stir well. When the material is dry, turn off the stove.
